Eat the Rainbow: Baked Rainbow Donuts
I’ve recently amassed a few unicorn-themed cookbooks. I’ve decided to start a new series where I try and review various recipes from these cookbooks.
I really enjoyed this recipe for rainbow donuts. It was incredibly easy to follow and the donuts were delicious. I also appreciate that these were baked and not fried. The donuts weren’t overly sweet either. I tried the donuts without glaze and thought they weren’t sweet, but once I added the glaze they were perfect. I also love all the decorating possibilities! I will definitely be making these again in the future!

Ingredients for the donuts:
- 2 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 (1 stick) unsalted butter, softened
- 1/2 cup granulated sugar
- 1/3 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup whole milk, warmed
Ingredients for the glaze:
- 1 1/4 cups powdered sugar
- 1 tablespoon unsalted butter, melted
- 2 tablespoons heavy whipping cream
- Food coloring of your choice
- Edible glitter/sprinkles
I didn’t have heavy whipping cream so I used milk instead. Another modification I made is that I divided the donut batter into separate bowls and added food coloring to each one. I then added the batter by spoonful into a gallon ziplock bag (since I didn’t have a piping bag tool).
One thing I learned about making donuts is you need to fill the pan even less than you think you do. My first batch came out more like muffins. They were still super pretty though!
I didn’t have any edible glitter or sprinkles but found the glaze was enough decoration for me.
