Eat the Rainbow: Rainbow Jello

One of my bridal shower gifts was a recipe book full of recipes from friends and family. It’s such an awesome gift as I know these recipes are tried and true. When I saw a recipe for rainbow jello, I had to try it!

Ingredients:

  • 3 oz. box red jello
  • 3 oz. box orange jello
  • 3 oz. box yellow jello
  • 3 oz. box green jello
  • 3 oz. box blue jello
  • boiling water
  • cold water
  • 2 cups milk
  • 1 cup sugar
  • 2 pkgs. unflavored gelatin
  • 1/2 cup cold water
  • 1 pint sour cream
  • 2 tsp. vanilla extract

One thing I learned – an 8×8 pan is not big enough. My first 8×8 pan filled up by the time I finished the green layer, and then I had to use a second pan for the rest of the colors. You’ll want a 9×13 pan at least or use clear cups. The next time I make this I might experiment with using a bundt pan, too.

White Filling Directions:

  1. In a saucepan, bring 2 cups of milk to a boil. Add in the sugar.
  2. Meanwhile, dissolve the unflavored gelatin in the 1/2 cup cold water. Add to the milk mixture and let it cool.
  3. In a separate bowl, add the sour cream, vanilla, and milk mixture. Whisk together.

NOTE: If the mixture begins to thicken while you are making the layers, set your bowl into another bowl of warm water to keep it warm.

Jello Directions:

  1. Place each color of jello in a small bowl and add 1 cup of boiling water. Stir until dissolved.
  2. Then add 1/3 cup cold water (it will be thicker than normal jello once it is set).

NOTE: Only make 1-2 packages of jello at a time so that they don’t set before you are ready.

Layering Directions:

  1. Add a layer of the white filling and chill in the refrigerator for 20 minutes (use a baster).
  2. Then add a layer of jello and chill for 20 minutes (use a small ladle).
  3. Continue until you have added all of your layers.

NOTE: The process should take 4 hours.

While this takes a while, the payoff is worth it! This would be a perfect dish to bring to a party or gathering – whenever we’re able to have those again. This was a lot for just the two of us in this house – though thankfully some friends were able to swing by to grab some.

Make it sparkly by mixing in some edible glitter! Or add in some cut up fruits. Whatever your heart (and stomach) is feeling!
