Eat the Rainbow: Smoothie Bowl
I’ve recently amassed a few unicorn-themed cookbooks. I’ve decided to start a new series where I try and review various recipes from these cookbooks.
This recipe is adapted from Unicorn Food: Natural Recipes for Edible Rainbows. This book centers around making and using natural food coloring in all its recipes. There’s no artificial coloring used at all.
This recipe is for 2 smoothie bowls:
- 5 ounces almond milk
- 3 ounces coconut milk
- 1/2 cup plain or vanilla yogurt
- 1 banana
- 1/3 cup blueberries
- 2 tablespoons agave syrup
- Natural blue food coloring
- 1 handful of blackberries
- 2 tablespoons frozen raspberries
- A few coconut flakes
- 1/2 of a kiwi fruit
- 3 slices dragon fruit
- Edible gold glittter
My modifications: Silk makes a coconut and almond milk blend which I used. I used strawberries instead of raspberries. I also used honey instead of agave. I didn’t have dragon fruit, blackberries, or edible glitter – so those were omitted. Chobani has a Madagascar Vanilla and Cinnamon flavor that I used for the yogurt.
This smoothie bowl is incredibly easy to make and is very filling. It’s not overly sweet either. If you have cookie cutters, you could cut up your fruit into cute shapes like stars or hearts. Depending on your preferred fruits, you could easily adapt this to be any color. I’m already thinking about making a tropical smoothie bowl next time!
