Eat the Rainbow: Rainbow Pancakes
I’ve recently amassed a few unicorn-themed cookbooks. I’ve decided to start a new series where I try and review various recipes from these cookbooks.
The inspiration for this came from Unicorn Food: Magical Recipes for Sweets, Eats & Treats. It’s an absolutely gorgeous cookbook with beautiful photos and easy to follow recipes.
The recipe in this cookbook walks through how to make your own pancakes from scratch. At some point, I will have to try it – but since I already had a box of pancake mix on hand, I used that instead.
Once you’ve got your pancake batter, you separate it into different bowls and mix in the food coloring. Even if you struggle (like I do) cooking them into perfect round pancake shapes, they still look beautiful. These don’t taste any different from your plain, buttermilk pancakes but they feel more magical. I highly recommend it.
Also, you can never really go wrong with pancakes.
If you don’t like pancakes, you can make waffles instead!
