Eat the Rainbow: Rainbow Kebabs

I’ve recently amassed a few unicorn-themed cookbooks. I’ve decided to start a new series where I try and review various recipes from these cookbooks.
My husband requested that I make something rainbow that isn’t baked goods. While baked goods and sweets are my go to, I was up for the challenge and landed on rainbow kebabs. This is another recipe from Unicorn Food: Magical Recipes for Sweets, Eats & Treats by Rachel Johnson.
This one is pretty straightforward. All you need is an assortment of rainbow colored vegetables. The book also has a recipe for chimichurri dressing that calls for the following ingredients:
- 1/4 cup extra virgin olive oil
- 1 tablespoon chopped Italian parsley
- 1 tablespoon chopped fresh cilantro
- 2 tablespoons red wine vinegar
- 1 clove garlic, minced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly cracked black pepper


These came out really well and the dressing is really good. It’s a colorful dish that’s easy to make and is really healthy. I highly recommend it!
