Eat the Rainbow: Rainbow Cheesecake

I’ve recently amassed a few unicorn-themed cookbooks. I’ve decided to start a new series where I try and review various recipes from these cookbooks. I couldn’t resist making some rainbow cheesecake!

This recipe is from Easy to Bake Unicorn Cookbook. Aside from one or two more advanced recipes in the book that I’ve yet to try, the rest of the recipes are pretty accessible. They’re perfect for parties. I’ve actually made this cheesecake a few times and it’s always a hit. It calls for the following ingredients:

  • 2 blocks 8 oz. cream cheese, softened
  • 1 cup sugar
  • 2 cups heavy cream
  • Food coloring
  • 1 graham cracker crust

You could also take any cheesecake recipe and make it rainbow. Just take the batter and dye it the colors you want. You can layer it or swirl it. The one I made had one layer of each color. It kind of reminded me of Trix yogurt!

In the past, I’ve swirled the colors. As you can see, you can be really creative with this recipe. With some edible glitter you could totally make a galaxy cheesecake.

Even though I was spending my birthday in quarantine (thanks, #covid19), I still wanted to do something festive. So, I made myself a rainbow cheesecake. It was absolutely delicious.

I like this recipe because it doesn’t require any baking whatsoever. The hardest part is waiting for the cheesecake to set and it takes 6-8 hours. It’s worth the wait and will wow whoever you serve it to.
